It’s officially spring in Toronto, but it’s been unseasonably cold and we’ve had a second coming of winter with 5-cm dumps of snow in April! Mixing up a filling and savoury spinach quiche with springlike ingredients helps me wait for the snow to melt and the fragrant hyacinths to bloom.
At work, I teach people how to eat healthy on a budget and this spinach quiche is one of my favourite recipes. The spinach quiche is easy to whip up with pantry ingredients: I always have frozen spinach and evaporated milk in my kitchen. However, the the tarragon adds just a little of mild anise flavour to make it a bit out of the ordinary. No salt is added to the quiche because the feta adds enough salt by itself. If you’re in a hurry, you can buy frozen pie crusts; or if you’re like me you can use the odds and ends of homemade pie crusts in your freezer (from your pie-making boyfriend).
Spinach and Feta Quiche
Ingredients
- 1 9- inch pie crust
- 1 package 300 g/10 oz frozen chopped spinach (defrosted and well drained)
- ½ cup 125 mL crumbled feta cheese
- 4 eggs
- 1/2 12- oz can undiluted evaporated milk
- ¼ teaspoon dry mustard
- ¼ teaspoon dried tarragon
Instructions
- Preheat oven to 350F (180C).
- Parbake the crust for 20 minutes. Remove from oven.
- Spread spinach and feta cheese evenly over the pie crust. Place the crust on a baking sheet (to prevent spills).
- Beat together eggs and combine with evaporated milk, dry mustard, and tarragon.
- Carefully pour egg mixture (custard) over the filling ingredients.
- Bake in a preheated 350F (180C) for 35 to 40 minutes or until a knife inserted near the centre comes out clean. Let stand for 5 to 10 minutes before cutting into wedges to serve.
Quiche is a favorite meal for me. Breakfast or lunch and even at dinner. I’ll pair it with a salad, fruit or a nice French bread and I’m in heaven.
