These pumpkin spice muffins are flavoured with cinnamon, nutmeg, cloves, and ginger, and are studded with raisins and walnut pieces. The craggy tops hide a soft and flavourful crumb which tastes just like Thanksgiving. Serve these with a cup of cold milk or a mug of tea on a blustery fall day.
Ryan made a delicious pumpkin pie for my family’s Thanksgiving dinner, but the pie recipe only used 2 cups of canned pumpkin pie, leaving 1 1/3 cups left in the can. We obviously didn’t want to throw it away, so we made these delicious walnut raisin pumpkin spice muffins!
Walnut Raisin Pumpkin Spice Muffins
Servings 12
Ingredients
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 6 tablespoons butter
- 1 1/3 cups light brown sugar
- 2 large eggs
- 1 1/3 cups pumpkin purée
- 1 teaspoon vanilla extract
- 1/2 cup walnuts
- 1/2 cup raisins
Instructions
- Preheat oven to 350F. Line a muffin tin with paper liners.
- In a medium bowl, mix together the flour, baking powder, spices, and salt.
- In a large bowl, beat together the butter and brown sugar. Add the eggs, one at a time. Stir in the pumpkin puree and vanilla extract. Stir in the walnuts and raisins.
- Add the dry ingredients to the wet ingredients, and stir just until incorporated; do not overmix.
- Divide batter into 12 muffin cups and bake 20 minutes or until a toothpick inserted into one muffin comes out clean.
- Let cool on a rack before serving.
