Make Your Own Spice Rub

An early spring in Toronto does not seem likely with the 15cm of snow expected today. Sadly our polar vortex continues. Here’s how to make a really quick spice rub to flavour any roast that will not only fill your house with delicious comforting aromas, but also keep you toasty warm. All you need is a mortar and pestle (I love the marble ones) and some spices. Here, I used sage, whole black peppercorns, and rosemary.

Simply add equal parts (or adjust to your own taste) of the spices you’ve chosen to your mortar. Sprinkle in some sea salt too.

Grind into a course consistency. Sprinkle over a roast, potatoes, or store in a spice jar for future use.

Other ingredients to add for variations:

-fresh garlic*
-olive oil*
-chili flakes
-brown sugar
-onion powder

*these moist ingredients will not keep very long once mixed, so it is best to only make as much as you need in this meal.
