In Riyadh, Saudi Arabia, the compound we lived on had a massive, outdoor, Olympic-sized swimming pool. There weren’t many kids on our compound, so whenever we would go swimming, the pool would be quite empty…there might have been a few nurses tanning themselves. Since most of the year the weather was 45 C and sunny, we would spend our weekends at the pool. After horsing around and diving, we would get hungry, and there was a small barbecue stand in the corner of the pool grounds area. We would order a beef burger or chicken burger and get a drink. I never liked pop (the bubbles hurt my tongue), so I would get iced tea. And the iced tea came in two flavours: lemon and peach.
For some reason, peach iced tea is basically unheard of in Canada, but so delicious! Now that Niagara peaches are in season here, what better way to make use of these perfumed, juicy fruits than use them to flavour iced tea. I made a peach-infused simple syrup, which is a beautiful coral colour, by bringing some not optimal peaches to a boil in equal amounts of sugar and water.
I like to spike this iced tea with plain or strawberry vodka, or rum. You can also add a more tart flavour with a splash of raspberry shrub.
- 1 L water
- ¼ cup black tea leaves, or 4 black tea bags
- ½ cup peach simple syrup
- Bring the water to a boil in a large pot.
- Once the water has boiled, add the tea or teabags. Take the pot off the heat and let the tea steep. If you are using teabags, take them out after 2-4 minutes. If using loose leaf tea, you can let it steep for up to 10 minutes without the tea getting bitter.
- Add the peach simple syrup. You might need more, if you want a stronger peach flavour.
- Let the tea cool, then chill it in the fridge.
- Serve chilled over ice.
