DIY Ginger Syrup, Kiku Corner

This rich ginger syrup has a very concentrated flavour and a rich golden colour. It’s also so easy to make! Donatello and I made two large mason jars of it and found ourselves adding it to just about everything: tea, cocktails, and even salad dressings.

Homemade Ginger Syrup

Ingredients
  • 2 cups white sugar
  • 1.5 cupswater
  • one hand of ginger (mine was about 120 grams)
Instructions
  1. Wash and slice the ginger into thick slices.
  2. Pour the sugar and water in a small pot and place over medium heat.
  3. Add the ginger and mix occasionally, bringing mixture to a boil.
  4. When sugar dissolves, turn heat lower and simmer mixture for thirty minutes to release the flavours. Remove heat and allow mixture to cool.
  5. Once cooled, cover and place in the refrigerator. Steep this concoction over night.
  6. Strain mixture into a sterilized mason jar and seal tightly. Store in refrigerator.

This mixture should keep a few months if kept cool in the fridge, but you will probably use it up much sooner than that.
