Here is an easy, no-fuss recipe for pulled pork that you can make ahead in your slow cooker. I made a batch of this for Ryan’s Valentine’s poutine buffet party present, alongside cooked and crumbled bacon, sliced avocado, green peas, sauteed onions in vermouth, sauteed mushrooms, fried halloumi cheese, and three types of gravy. Or if you’re not feeling fancy, you could also serve this pulled pork on a fresh roll at a barbecue.
Pork shoulders (also called pork butts, for some reason) are affordable but chewy and tough cuts of meat that benefit from long, moist, slow cooking. I like to keep the skin and fat on the pork shoulder before putting in the slow cooker as this helps keep the meat from drying out.
Now, I don’t eat meat but I do enjoy cooking it. There are just so many recipes for which there are no vegetarian alternatives! If you don’t eat pork, you can try making this with an equivalent amount of beef or chicken. You can also make this slow cooker pulled pork recipe ahead, shred the meat, and then freeze it for later.
- 3 Tbsp Hungarian paprika (not hot paprika)
- 1 Tbsp salt
- 2 tsp ground black pepper
- ½ tsp chili flakes
- ½ tsp dried thyme
- ¼ cup red wine vinegar
- ⅓ cup honey
- 3 Tbsp olive oil
- 1 onion
- 1 tomato
- 1 bay leaf
- 1.5 kg bone-in pork shoulder
- Mix the paprika, salt, pepper, chili flakes, and thyme in a small bowl.
- Mix in the vinegar, honey and olive oil to make a paste.
- Peel and slice the onion and place on the bottom of a slow cooker.
- Place the pork shoulder on top of the onions.
- Pour the spice paste over the pork, making sure to coat it completely.
- Chop the tomato and add to the pot.
- Tuck the bay leaf into the sauce.
- Set the slow cooker to LOW and cook for 8 to 8.5 hours, until the pork is tender and falls apart easily.
- Discard the bay leaf. Take the skin and big chunks of fat off the meat and discard. Take out the bone and discard. Shred the meat with about half the sauce.
- I made the rest of the sauce into a gravy for poutine.
