This tomato tart looks fancy and tastes divine, but the best part about the recipe is that it doesn’t take much effort at all. I love the idea of tarts because they are so versatile and the fewer the toppings, the more elegant they appear. The possible adaptations are endless- you really only need a good cheese and a couple of veggies. How about some chevre with caramelized onions or blue cheese and apples?

Bake this tomato tart on the weekend for Mother’s Day and pair it with a crunchy salad and a refreshing white wine. A perfect way to treat your mom on this Sunday afternoon.

Ingredients
  • One roll frozen puff pastry, thawed in fridge overnight or at room temperature for an hour
  • Three ripe tomatoes
  • Half package of Boursin cheese, about 75g
  • Six olives, sliced
  • One teaspoon butter, melted
  • Pepper
  • One egg, lightly beaten
Instructions
  1. Preheat the oven to 375 F (190 C) degrees. Unroll puff pastry and transfer to a baking sheet lined with parchment paper.
  2. With a small sharp knife, lightly mark the pastry about 1 cm from the edges to create a border. Don't cut all the way through the pastry, this is just to score an edge for the beautiful golden crust to come. Brush the entire pastry with butter.
  3. With your sharpest knife, slice tomatoes as thinly as possible. Arrange them in overlapping rows on top of puff pastry, staying within the scored edge.
  4. Crumble Boursin evenly over tart and then sprinkle the sliced olives. Season liberally with freshly ground black pepper.
  5. Brush the edges with egg. Bake tart for 25 minutes until edges are golden.
