When Meinhilde and I were nine and ten years old respectively, we moved to Saudi Arabia. Riyadh, our new home in the middle of the desert, had two temperatures: hot and hotter. As a couple of Canadian kids, we weren’t accustomed to hydrating ourselves very often. In Saudi we learned to drink a ton of water. We would go to the nearest restaurant, aptly called Oasis, and guzzle up their delicious iced tea. This version is slightly more sophisticated and a gorgeous treat on a hot summery day.
I’ve specified black tea in the recipe below but any of your favourite loose leaf tea would be delicious. Pansies are flowers that are safe to eat, but be careful using other flowers as garnishes if you’re not completely sure.
- 3 tbsp loose black tea
- 1 lemon, juiced
- 1 litre water, freshly boiled
- 3 tbsp honey
- 4 sprigs mint
- 4 pansies
- Add tea to a metal tea infuser and place over a one litre mason jar.
- Pour boiled water into mason jar and allow tea to steep 10 minutes. If you use an herbal tea, you can allow a longer steeping time since it will not become bitter.
- Add honey and lemon juice, give it a stir, and chill.
- Once cool, pour tea into four glasses with ice. Garnish with sprig of mint and a pansy.
- Serve immediately.
