I find that bunches of dill I get at the market are often very big – too big to use up before it all wilts and goes icky. So why not make a batch of lemon dill pesto! If you don’t have any fresh chervil, you can add 1/2 cup flat leaf parsley instead, for a bit of a different flavour.
The lemon dill pesto is quite versatile; here are some tasty ways to use it:
- dress a potato salad
- dress a pasta salad
- mix into hot, cooked pasta and cooked vegetables
- drizzle some on cooked fish
- drizzle some on barbecued vegetables
- add a dollop onto smoked salmon on a cracker
- add a dollop onto a cracker topped with cheese
Lemony Dill Pesto
Servings 2 /3 cup
Ingredients
- 1 cup fresh dill
- 1/2 cup fresh chervil
- 1/3 cup walnuts
- 1/4 cup olive oil
- 1 clove garlic
- zest of 1 lemon
- juice of 1 lemon about 1/4 cup
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Place all ingredients in a food processor.
- Blend until everything is evenly chopped.
- Store, covered, in the fridge for up to 5 days.
