This is a more grown-up version of regular old cheese and crackers. Adding a bit of pesto, like pesto Genovese or my lemon dill pesto, dresses up this little appetizer and adds a touch of colour and hit of flavour.
You can use many types of cheeses for this simple but tasty appetizer. Here, from left to right, I used fresh Brillat-Savarin, Beemster, and cream cheeses. Brillat-Savarin is a type of cow’s milk cheese that, when aged, is similar to a Brie. The one I used was fresh, so it was lusciously creamy with a bit of salty tang and none of the funky, mushroomy flavours of a Brie. Like the cream cheese, the Brillat-Savarin nicely complemented the herbal dill and sharp lemon. The Beemster, a type of Gouda, is a hard, Dutch cow’s milk cheese. I had the ‘Classic’ variety that is aged for a minimum of 18 months and is said to have flavours of whiskey, butterscotch, and pecans.
Cheese and Crackers with Pesto
Ingredients
- 30 crackers Triscuits, Saltines, water crackers
- 100 g cheese I used three types: fresh Brillat-Savarin,Beemster, and cream cheese
- 1/4 cup pesto
Instructions
- Set aside any broken or cracked crackers - make breadcrumbs with those!
- If using a medium or hard cheese, cut into square slices that are just smaller than the cracker you are using. Place these cheese squares on the crackers.
- If using a soft or cream cheese, spread 1/2 - 1 tsp of cheese on each cracker, depending on the size of cracker.
- Add a small dollop of pesto, about 1/4 tsp, on top of the cheese.
- Serve immediately.
