These Swedish pancakes are my favourite type of pancake!
Our mom is German so she isn’t used to and doesn’t like the fluffy, American-style flapjacks that are the regular pancakes in Canada. While I don’t mind those, I prefer these thin, crepe-like Swedish pancakes. I find that these are more toothsome and less fluffy and less like cardboard, which the regular North American pancakes can sometimes mimic.
I used to make these so often, I’ve memorized the recipe, and I’m not sure why they were specified to be Swedish. The pancakes are easy to whip up on a weekend morning, and I used to make them for family breakfast while I was in middle and high school. Here, I use a regular-sized frying pan and about 3/4 ladle full of batter will make one Swedish pancake.
Although these are called Swedish pancakes, I don’t know if they actually eat them in Sweden. However, these are similar to what are eaten in Holland, Germany, and France, so I suppose they could be Swedish after all!
Some of our favourite toppings are sugar and lemon juice, butter and maple syrup, berries and whipped cream, or just melted butter! They are also great for savoury fillings. I suppose you could add egg, ham, and cheese, or even leftover curry. Let us know how you like them!
Favourite Swedish Pancakes
Ingredients
- 1.5 cups all-purpose flour
- 1 tsp salt
- 1 Tbsp sugar
- 3 cups milk
- 2 eggs
- 2 Tbsp butter for cooking
Instructions
- Mix the dry ingredients in a large bowl.
- Beat in the milk and eggs until the batter is smooth.
- Melt a small dab of butter in a large frying pan over medium heat.
- When melted, cook about a half ladlefull of batter to the pan and swirl to coat. The batter should evenly coat the bottom of the pan.
- Cook until the top starts to look dry, about 2 minutes, then flip, and cook about 1 minute more.

Yes, we DO eat a lot of pancakes in Sweden, and your recipe is spot on !
I tend to make them all in one go, and palce them on top of each other on a plate in the
wamr oven, sometimes with jam (lingonberries, raspberry, strawberry) and cut the pile
like a cake. Deluxe: Spread whipped egg whites on top and bake in the oven until set..

We love Swedish pancakes with lingonberry. But, I don’t really know how to make them properly. I just kinda water down the regular American pancake mixes. Thanks for sharing this recipe!
