This bacon and bonito cold tofu is so good it will convert anyone who is skeptical about tofu. Whenever I hear someone say they don’t like tofu, I know they’ve never tried this dish.
There are various type of tofu, but my favourite is the silken variety. Yes, there is firm tofu, but it just doesn’t seem to absorb flavours in the same way that silken does.
There are many umami components in this dish. Firstly is the Kikkoman Sauce, which is a soy sauce soup base. It alone is so delicious and would probably be enough to make the tofu a tasty treat.
Other umami treats in this dish are the lamb bacon and bonito flakes. If you don’t have lamb bacon, regular pork bacon is fine too.
The other unusual component of the bacon and bonito cold tofu is that tofu is cold. It is rarely served like this but for the few hot summer months, it is a cooling treat. It also makes the dish easy to prepare for guests since the bacon can be fried ahead of time and the remaining ingredients just need to be assembled upon arrival.

Bacon and Bonito Cold Tofu
Ingredients
- 400 grams silken tofu
- 1 tbsp Japanese style mayonnaise
- 6 tbsp Kikkoman Hon Tsuyu (soup and sauce base)
- 1 slice lamb bacon, fried, drained and chopped
- 1 tsp black sesame seeds
- 1 tsp bonito flakes
- 1 tbsp chives chopped finely
Instructions
- Drain tofu and slice into six cubes, placing each in a small bowl.
- Pour one tablespoon sauce base on each piece of tofu.
- Make a small dollop of mayonnaise on each piece of tofu.
- Garnish each dish with a sprinkle of lamb bacon, sesame seeds, bonito flakes, and chives.
