This honey mustard roast duck is a recipe from my German aunt. Roast duck is a common dish served at Christmastime in Germany, and aunt’s mother, Oma Ella, would raise ducks herself. If serving a meal for a larger group, then they would roast a goose.
Roasting the duck at a low temperature helps keep the meat juicy, tender and succulent. Brushing the duck with the salt water and then roasting it at a higher heat helps get the skin crispy.
Once baked, the mustard and honey flavour is completely mellowed and complements the duck beautifully. The honey slightly darkened on the duck skin and gave a hint of caramel flavour. If you find the duck wing tips and drumsticks brown too much, you can loosely wrap them in bits of aluminum foil.
We served this crispy honey mustard roast duck for our family’s Christmas dinner. Served alongside mashed potatoes and peas, this made a tasty meal. I also added some chopped kabocha squash to the pan when there was about 30 minutes to go. The squash cooked in the duck fat and the sweetness complemented the duck nicely.
The duck normally renders lots of fat but not a lot of pan juice, so this recipe doesn’t make a good gravy. However, the duck is so moist that it doesn’t need it!
Crispy Honey Mustard Roast Duck
Ingredients
- 1 duck 2.5 kg
- 2 Tbsp Dijon mustard
- 2 Tbsp liquid honey
- 2 oranges or lemons
- 2 tsp salt
- 2 Tbsp cold water
Instructions
- Preheat oven to 300F.
- Thaw the duck and place on a rack in a roasting pan.
- Mix the mustard and honey in a small bowl. Smear it all over the duck.
- Halve the orange or lemon and place in the cavity.
- Cover the duck loosely with aluminum foil.Bake the duck for 4 hours, until done. Meanwhile, mix the salt and water.
- Remove the duck from the oven, drain excess fat, and remove the aluminum foil.
- Crank up the oven heat to 400F. Brush the salt water all over the duck. Return the duck to the hot oven and roast for an additional 15 minutes, until skin is caramelized and crispy.
