Chocolate Chip Peanut Butter Cookies

Try baking these chocolate chip peanut butter cookies during your isolation! If you’ve looked at our cookie archive, you can see that I love cookies with chocolate. I also love peanut butter (like most North Americans), but I’m not a fan of those plain peanut butter cookies. You know, the ones with the fork tine imprints. They are often too dry and crumbly for me.

Chocolate Chip Peanut Butter Cookies

These chocolate chip peanut butter cookies are soft and chewy, and nicely studded with chocolate chips. I like to use crunchy peanut butter because the bits of peanut add great texture to the cookies. However, if all you’ve got is creamy peanut butter, that’ll work fine as well.

Most North Americans like the combination of peanuts and chocolate. Whether it’s chocolate-covered peanuts, peanut butter cups, or chocolate-swirled peanut butter, there are a lot of options! Not everyone likes this flavour combination though. In university I had an Australian friend who thought it was gross and weird! She liked a chocolate bar called Cherry Ripe, which I in turn thought was gross.

Chocolate Chip Peanut Butter Cookies

Ingredients

  • 1 cup butter softened
  • 3/4 cup brown sugar packed
  • 3/4 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup peanut butter crunchy
  • 2 cups flour all purpose
  • 1/2 tsp baking soda
  • 2 cups chocolate chips

Instructions

  • Preheat oven to 300 F.
  • In a large bowl, beat the butter and sugars until fluffy.
  • Beat in the eggs, one at a time. Beat in the vanilla and salt.
  • Add the peanut butter and beat until well blended.
  • Add the flour and baking soda and beat until flour is incorporated.
  • Mix in the chocolate chips.
  • Place dough by heaped tablespoons on a baking sheet lined with parchment paper.
  • Bake the cookies 20-23 minutes or until lightly browned.
  • Remove from oven and let cool for five minutes before transferring to a wire rack and let cool completely.
