Jump to RecipeThe first time I ever heard of hearts of palm was on a beach in Montevideo, Uruguay with Donatello. We were on a short break from our cruise ship job and after a beautiful bicycle ride, we were famished. Donatello found a cute little cafe and ordered us hearts of palm sandwiches. Those tender white tubes were so exotic to me at the time. I was hooked.
I have only found canned hearts of palm back in North America, but they work fine. Rinse them a few times before using them in this Citrusy Hearts of Palm Salad.
This Citrusy Hearts of Palm Salad is colourful and refreshing. It is on the light side, so you could also add some protein on top to make it a more substantial meal. I had cooked peeled shrimp on this salad for lunch and loved it. Salmon or chicken would also work well.
For this Citrusy Hearts of Palm Salad, beautiful Cara Cara oranges are the citrus star. They have a lovely ruby colour, similar to a grapefruit. If you cannot find these, then any other sweet juicy orange is a reasonable replacement. Mandarins or tangerines would also work well.

Citrusy Hearts of Palm Salad
Ingredients
- 1 cucumber, thinly sliced
- 1 can hearts of palm, approx 400g
- 1 Cara Cara orange
- 1 juicy lime
- 3 tbsp olive oil
- 1 small handful of cilantro
Instructions
- Slice cucumber on a wide shallow serving platter. You can use a mandolin or thinly slice with a sharp knife
- Open can of hearts of palm and rinse well. Slice tubes into 0.5cm rounds. Evenly place on serving platter on top of cucumbers.
- Zest the orange on top of the salad. Peel rind off orange and divide into segments. Cut each segment into three and arrange on plate.
- Zest the lime on top of the salad and then cut in half. Squeeze juice from both halves onto salad.
- Sprinkle with the olive oil.
- Roughly chop cilantro and sprinkle onto salad.
